Parmesan loaf 🍞 26,6g TC, entire loaf!

This loaf couldn't be simpler!  It's PERFECT for croque monsieurs/toasting.



Ingredients:

•400g almond powder (4,9/100g = 19,6g TC)
•250g butter (zero)
•12 eggs (0,5 per egg = 6g TC)
•200g parmesan (zero)
•dried herbs *optional 

Melt the butter (microwave) in a large bowl, add in the almond powder, crack in the eggs and mix. Fold in the parmesan (and herbs).
Pop the mix into a loaf tin and bake at 180°C until golden and firm (using my wood oven, at 160°C, I cook for 80 mins - in a regular oven the timing should be less).
Leave to cool before slicing - once cool, it will slice very well, I get 30+ slices from a single loaf.

You can make variations of this loaf - I've added chopped nuts and extra parmesan; diced ham and olives; cubed cheese and garlic powder.
