Blueberry muffins, 2.64g total carb each.

Easy muffins, my 5 year old did these without help (except the oven) 👍



Recipe (for 15 muffins), at 2.64g total carbs each;

300g almond powder/flour (14.7g TC) 

250G butter (zero/trace)

8 eggs (4g TC)

1 teaspoon baking powder (trace)

150G frozen blueberries (21g TC)


Soften the butter in a microwave, add the almond powder, baking powder & mix, add in the 8 eggs and mix until thick batter consistency. Spoon into (15) muffin cases (almost to the top), divide and add the blueberries (about 5-6 each muffin) and push into the batter of each. Bake at 190℃ for 20 mins, or until firm and golden.

Enjoy on their own, or with a scoop of mascarpone, yum!
