Sausage rolls, 1.59g carbs per serving.

Mmmm, I was very excited to come across a recipe for keto sausage rolls!
Here's my version (makes 8 rolls/servings)!

100g red cheddar, grated (0 carbs)
100g parmesan, grated (0 carbs)
75g soft/cream cheese (2.25g carbs)
25g butter (0 carbs)
120g almond powder (5.88g carbs)
10g psyllium husk
1 large egg (0.6g carbs)
4 pork sausages (4g = 1g carbs each)
salt & pepper

Pre-cook the sausages, so they're just cooked through, but no more than that.

Mix the cheddar, parmesan, soft/cream cheese and butter in a microwave proof bowl. Add in 100g of almond powder, mix again.
Zap in the microwave on full heat for 40 seconds.
Give a quick stir.
Zap in the microwave for another 20 seconds.
Stir the egg, salt and pepper, the psyllium husk and the last 20g of almond powder, plus salt and pepper.

Remove the mix from the bowl and pop onto some baking paper. Cover with a second sheet of paper and roll out, like traditional pastry.

Cut into lengths to fit the sausages.
Place sausage onto pastry, roll firstly with the paper (like making sushi), otherwise it might break. If there are any breaks when you lift the paper away, 'squish' back into shape!

I then cut my sausages in half as they were jumbo size!

Pop onto a baking tray and into the oven.
I cooked them for 15 mins at 180, then 20 mins at 200° - *note, my oven needs one of the fans replacing, you might need less time.

Let cool and enjoy!
