Lasagna, keto of course, 2.22g total carbs.


I had some mince that needed using, and my absolute favorite food in the world is lasagna....I wasn't sure how or if it would work keto style, but wow, IT IS LUSH! Lol!

Serves 4;
400g courgette, sliced thinly (choose a fat one - easier to slice) at 1.8g carbs per 100g, the carbs are 7.2g
400g minced beef, carbs 0g
400g raclette cheese (sliced), carbs 0g
50g mascarpone, carbs 1.7g
100g parmesan, carbs 0g
A pinch or two of dried herbs, carbs trace only.
Butter for frying.

*optional, 2 garlic cloves at 1g per clove, or 1tsp garlic powder at 2.3g per tsp. These are optional, so not added into the total carbs of this dish - it won't add a huge amount to the total carbs per serving, as this dish serves 4 😉

Fry off the mince in butter, add the dried herbs. When cooked, add in the mascarpone and cook for a few more minutes, stirring in the mascarpone so it becomes 'saucy' 😉
Line the bottom of your oven dish with raclette cheese, spoon over some mince, layer the courgette over the mince, then repeat - cheese, mince, courgette, cheese, mince, courgette, until you've used everything.
Make sure the final layer is cheese, so it has that delicious crispy top.
Cover that final layer with 100g of parmesan.
Bake for 30-40 mins at 190℃.
Allow to cool for 5-10 mins, serve (salad/greens optional - it's perfect on it's own) and enjoy.
