Pork pies, 3.23g total carbs each!

I've been wanting to try making keto pork pies for ages, so finally got round to buying some suitably sized spring tins, which arrived just in time for hubs 50th birthday 🤗 *I will link the spring tins in the comment section 👍 Ingredients (makes 12 pies); Filling - 2kg pork (zero) 2 table spoons dried herbs (trace) Pastry - 600g linseed/flax flour (19.2g TC) 400g almond powder (19.6g TC) 550g butter (trace) 550ml water 10g salt Jelly - 500ml chicken stock (trace) 3.5 sheets or 6.5g gelatin Mix the lin flour, almond powder & salt in a large (!) bowl, make a well in the centre. Boil the water and butter gently. Once it's reached boiling, and the butter is melted, pour into the bowl/well. Mix until all combined. Whilst the pastry cools a little (it may be too hot to work straight away), dice the pork into small cubes (1-2 cm²) and mix in the herbs (if adding salt, do so just before filling the pies, as to not drain the moisture out the pork). I bulk ordered some pork scratchings at the weekend, I was so excited for my fat filled 'crisps'.... ....I guess, being vegetarian for the majority of the past 32 years, I should have tried a packet first 🤦 I don't like them, the chillie taste is yum, but it's a little too much like chomping directly into a pig. Brainwave - I'll blitz them in the food processor and use them as a crumb coating on scotch eggs, but hub says no, he's also not a fan. Oops!

Weight loss photos.

Looking back over this blog, I realised I didn't update of when I reached my target of overall weight loss- 100lb. I had yo-yo'd 20-25lb for several years and just couldn't budge the scales anymore.... Then I switched my way of eating to keto! NEVER in my wildest dreams did I think I could lose that amount, but I smashed it and lost 102lb (7 stones & 4lb). The huge majority of this weight loss (I think 76lb) was with keto over 8.5m. I started March 1st 2019, and had dropped the 76lb by November 21st! Here's before and after - before is 2010, aged 30, mum of 2 (2x c-sections and endometriosis).... after (now) is 2020, aged 40, mum of 3 (3x c-sections, endometriosis almost resolved). And....the jeans I was wearing in 2018/early 2019, which was NOT my heaviest - I can get both slim legs into one of my old jeans leg!
