White chocolate cheesecake, 38.52g TC for the ENTIRE cake!.


Base;

200g almond powder (9.8)

50g desiccated coconut (3.1)

100ml coconut oil, melted (0)

Mix base in a bowl, tip into your tin and flatten.


'Cheese' layer;

200ml cream (6.4)

200g mascarpone (5)

6 eggs (3)

vanilla powder (0)

250g cocoa butter (0)

Mix the cream, mascarpone, eggs & vanilla in a pan and heat. Stop the heat before boiling. Add the cocoa butter and stir to melt.

Pour onto base, cook at 160℃ for 30 mins.

Allow to cool FULLY before topping 😉


Cream topping

200ml cream (6.4)

100g mascarpone (2.5)

*80g white choc (2.32)

vanilla powder (0)

*I made the white choc myself, recipe coming soon!

Whisk the cream until stiff, add the mascarpone and vanilla. Spread half onto the cake, pipe the other half around the edge.

Top with white choc squares, chop remaining chocolate and sprinkle over.

Chill, serve, enjoy 🤗
